1 tablespoon unsalted butter
1 shallot, diced
1 ½ cups cooked ham, diced
1 tablespoon Dijon mustard
1 tablespoon honey
4 eggs
⅓ cup whole milk
½ cup plain greek yogurt
1 cup sharp cheddar cheese, shredded
½ cup parmesan cheese, shredded
1 ½ teaspoons pepper
¾ teaspoon salt
Directions
- Heat oven to 400F and grease a 9 inch pie plate. Carefully place the gluten-free pie dough in and press. Bake for 5 mins, then poke holes in the bottom of the crust using a fork and bake for another 5 mins before removing from the oven. Reduce the heat to 375F.
- Add the butter to a small pan and melt over medium heat. Add the diced shallot and sauté for five minutes until translucent. Allow to cool to room temperature.
- Dice the ham and add it to a medium-sized bowl with the dijon mustard and honey. Microwave for 15 seconds, then stir to combine the ingredients.
- In a large bowl, whisk the eggs for 30 seconds before pouring in the milk. Whisk to combine, then add the Greek yogurt, cheddar cheese and parmesan. Mix until well incorporated.
- Add the ham and cooked shallots to the bowl with the egg mixture. Mix again, then season with salt and pepper.
